Baking: Orange and Peanut Butter Cookies

I made cookies!

These were absolutely delicious. The peanut butter was subtle and added a richness and depth rather than an overwhelming flavor.
Orange and Peanut Butter Cookies
1. Preheat oven to 350 F/180 C.
2. Cream butter and sugar together until light and fluffy. Beat in egg, peanut butter, orange peel and juice. Sift flour and baking powder together and beat into mixture.
3. Drop rounded tablespoons of dough, spaced well apart, onto the baking sheets. I had three per row.
4. Bake until golden, 18 to 20 minutes. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely. I transfer immediately to keep the bottoms golden.
*As I'm vegetarian, I used OrgraN No Egg egg replacer instead.
Now, the recipe didn't call for the chocolate on top. That was my design, and I think it really made them! This glaze recipe is unbelievable; the texture was fabulous, it held its shape when spooning onto the cookies and then it set up perfectly!

- 1/2 c/100 g sugar

- Grated peel of 1 small orange
- 1/4 c/50 ml orange juice
- 2 c/300 g all-purpose flour
- 1 tsp baking powder

Thank you! :D You know, the funny thing is that I was out of a few baking ingredients and was looking for something I could make, and I stumbled upon this one. I don't think I would have tried it otherwise, but I'm glad I did!
Really, the orange definitely overpowered the peanut butter, but then again, I don't like coconut and when people have told me, "Oh, but you can barely taste it in this," I always can taste it very much. ;)
If you do try it, let me know what you thought!

Date: 2009-12-10 04:43 am (UTC)I doubled the recipe so that I would have enough for the cookie swap. I added cinnamon and did half crunchy and half smooth peanut butter. However, when I tasted one, I decided next time that I would add more cinnamon (I love cinnamon and it goes well with the orange) and add all crunchy peanut butter. Oh and I do not know if you did this, but since I was grating the peel, I just used the juice from the oranges..
The first dozen came out too perfect, so for the rest I tried to shape them less; just scooped and plopped.
Also, I have a funny story for you. When I was taking out the eggs I put them in the pockets in my apron. I knew they were there for then I needed them later, but I went about my business. As I was squeezing the juice out of the oranges, I leaned in too hard into the counter and crack, it broke right in my pocket. I tried to dry the apron, but I tend to be a messy baker, my clothes not my space, and I needed the apron. So I had to leave it on until the end.
Great recipe, thanks for sharing. You should try the cinnamon.
